My trips usually involve blazing hot sun, high temps & high humidity. I want that a/c break at lunch. Sunny Eclipse for me!
You're going a little out of the way. Do you spend the day at a waterpark or an afternoon of shopping & dinner at Disney Springs? |

I'll say a day long trip to Disney Springs. Would like to experience the water parks someday, just to see them in person, but think I'd be done with them after 2-3 hours, tops.
Classic character you'd like to see have an attraction in Walt Disney World:
Pinocchio (he's got a dark ride in Disneyland) or Bambi? |

Pinocchio. Lots of different places to incorporate into a ride.
Have a truly creepy after hours Halloween party at Studios or a glamorous, everyone had to dress up, after hours Oscar extravaganza at Studios? |

I've wondered for a while now a Halloween event that was more creepy and less silly would go over at WDW, so that's what I'll pick.
It's a concert in front of the castle!
Paige O'Hara singing songs from Beauty and the Beast or Jodi Benson singing songs from The Little Mermaid? |

Beauty & the Beast I think.
Who was a more surprising voice actor in a Disney movie?
Jerry Orbach (aka Lennie Briscoe, Law & Order) as Lumiere
Or
Glenn Close (Fatal Attraction bunny boiler) as Kala the ape, Tarzan's adopted mother? |

Contrasted to the characters you've referenced, I'd have to say Glenn Close. Thought she did a wonderful job as Cruella in the 101 Dalmatians live films, though. Still think the weirdest choices Disney made were the picking of John C Reilly and Sarah Silverman for the lead characters in Wreck-It Ralph. While both are quite funny, they push the envelope of crudeness in some of their other work.
If you happen to notice the person next to you in a line is a famous actor/athlete, would you try to talk with them (without making a scene or interrupting them with their families) or would you at most try to take a selfie with them visible in the background? |

I'd probably try to take a discrete selfie. Aren't most of them guided through the utilidors and backstage areas?

At Food & Wine, do you try something you've never had before or something you've had before but prepared in a new & intriguing way? |

I'd prefer trying something new
would you rather open the parks or close the parks? |

As the crowds always seem lighter, I'll say open the parks. Although the atmosphere at night is pretty spectacular!
The refillable mugs:
Great for at the resort but not worth the hassle to tote around all day or carrying it all day and never missing a chance for a refill? |

Wait, you can refill those in the parks?!?!
I say not worth the hassle. I try to carry as little as possible. (Stress on try)
At the pool for an afternoon -
I'm doing all the slides, participating in all the games, etc or
This shady spot looks good. Wake me up when you're ready to snack. |

The short nap in the shade sounds amazing!
In queues where the line splits (like in the boiler room on Tower of Terror) do you always pick the same direction (be it right or left) or do you try and guess which is shortest? |

I try to guess, then keep an eye on a total stranger in the other side & see who gets on the ride first!
Sushi or Teppen Edo at Japan or BBQ at the America pavilion? |

I love BBQ! That's my pick!
Castle stage show:
Right up front or towards the back? |

Towards the back. There's always so much to see, it's easier to take it all in.
Which MK opening show do you prefer - Main Train Station or at the Castle? |

I loved seeing the characters ride in on the train!
Character dining choice:
Garden Grill or Tusker House? |
